Most vegan pancake recipes I tend to find involve oats and/or bananas, and a whole lot of faff for some pancakes that don’t taste a whole lot like pancakes. So, I went back to a traditional pancake recipe and made some tweaks for a vegan recipe that tastes almost identical to the classic! It’s a lot less effort, and beautifully carb-y, and you probably already have the ingredients!
Ingredients (serves two):
– 1 cup plain flour
– half a pint of soy milk
– 1 tbsp oil, plus extra for frying
– 1 tsp baking powder
– toppings of your choice!
Throw all the ingredients in a bowl and mix thoroughly.
Fry small amounts (about a third of a cup at a time) in a little oil, flipping halfway through.
Top and enjoy!
